Puglian Cooking Classes with Sophie

Trulli Delicious offers two types of cookery classes, both totally hands on

  1. In person classes - we come to your Puglian holiday home and cook with you

  2. For those poor souls who can’t make it to Puglia, a bespoke online interactive class beamed live into your own home kitchen

In-Person Puglian Cookery Classes

Our two most popular (and fun) classes are Making Pasta, Southern-Style and Puglian Focaccia and Antipasti (see below) but if you’ld like to dive a little deeper, we would be delighted to construct a class specially for you. Maybe a full roster of antipasti, or a shoal of beautiful, fresh fish dishes, or a table of syrup-sweet desserts? Your call….

What Do You Get?

We bring everything to your Puglian holiday/home kitchen - ingredients, special equipment, aprons, recipes, enthusiasm. Give us half an hour to set up and we’re ready to cook with you. Classes last around 3-4 hours.

How Much?

We charge €280 + the cost of ingredients for up to 4 participants. Add €60 for each additional participant.

Making Pasta, Southern Style

Southern Italian pasta is simple and complex all at once. Made without eggs, its most famous form is the orecchietta, the little ear, Puglia’s favourite shape. In this class we make orecchiette, to be sure, but also delve into other classic shapes and sizes (cavatelli, minchiareddhri, sagne, gnochetti, fileja). To accompany our pasta, brasciole al sugo, slow braised beef olives in a lake of tomato sauce, or sugo San Giovanni (with cherry tomatoes, capers, olives and chillis).

 

Puglian Focaccia and Antipasti

In this class we make either the classic Focaccia Barese, with its topping of tomatoes, olives and oregano or the unusual Focaccia al Libro, book focaccia, seasoned liberally with olive oil and oregano. To accompany the finished focaccia, still warm from the oven, we make a couple of antipasti dishes - maybe friggitelli al pomodoro (small fried peppers in garlicky tomato sauce), cardoncelli mushrooms with borlotti beans and fig dressing, marinated anchovies, polpette di pane (bread and cheese fritters) or zucchini alla poverella (courgette with lemon and mint).

 

Online Interactive Classes

Our private, interactive, online classes are beamed live from our kitchen to your kitchens. Invite friends and family to join in wherever they are in the world! Sophie will lead you all through cooking a feast together. Choose from one of our standard classes (Making Pasta, Southern Style or Puglian Foccacia and Antipasti are firm favourites, but there are more options listed below) or let us create a bespoke menu just for you and your gang.

How does it work?

A week or so before the class we will email you the recipes, shopping lists, equipment lists and essential pre-preparation lists.   Accompanying these will be an invitation link to the class.   You can access the classes from your laptop, tablet or smart phone.    Each class has a maximum of 10 screens joining in, but there is no limit to the number of participants per screen. 

The Class itself:   Over our 2-hour slot, we’ll cook two or three recipes together, chatting as we go.  Sophie will show you what to do and when, checking frequently on how it’s going in every kitchen, answering queries, soothing anxieties.   Each recipe will be sufficient for 2-3 people (or more in the Dolce di Natale class).   Once the class is over it’s time for you to sit down and eat the gorgeous dishes you’ve created.

How Much?

We charge €300 for up to 6 screens (i.e per kitchen, regardless of the number of people gathered there). Add €50 for each additional screen, up to a maximum of 10 altogether.

 Friggitelli al Pomodoro – A gorgeous mess of peppers with tomatoes, garlic and olive oil. Good eaten warm, at room temperature, as a side dish, or a starter, or tossed through pasta. 

Ciceri e Tria – from the Salento, the southern part of Puglia comes this unusual, delicious dish of hand-made pasta cooked two ways (fried and boiled), with chickpeas.

 Terms & Conditions for Our Online Classes

ClASSES & CHANGES TO CLASSES

  • All classes are subject to availability and will only be reserved once full payment has been received and a confirmation email sent by us.

  • The course price includes recipe pack, shopping-, equipment- and pre-preparation lists.

  • We reserve the right to cancel or reschedule any class and will do our best to notify you immediately. We would not be liable for any other costs or expenses that you may incur.

HEALTH & SAFETY

  • We advise you to wear sensible clothing and footwear during the classes

  • We ask that clients be aware of the usual risks when working with kitchen equipment. Personal loss or injury will not be the liability of the cookery school.

CANCELLATION OF COURSES

  • We are unable to offer a refund if you cancel a booking less than 7 days prior to the date of the course. However should you wish to transfer your booking to someone else you are more than welcome to do so.

  • If you or your representative are unable to attend a booked course, but inform us more than 7 days in advance, our bookings and cancellation policy will apply.

DIETARY & ALLERGY REQUIREMENTS

  • If you have any allergies or illnesses then please indicate at time of booking.

  • If you have any special dietary requirements please let us know in advance as recipes will be finalised before the course.

ADVERSE WEATHER OR WIFI POLICY

  • We are unable to offer refunds should you not be able to attend due to adverse weather conditions or problems with wifi reception. Please let us know as soon as you can if you are unable to attend.
